The perfect light and sweet simple pastry frosting to top all of your favorite brunch pastries from scones to homemade Pop-Tarts!
This recipe is a small-batch simple pastry frosting that goes great with all sorts of hand pastries, including my favorite homemade Pop-Tarts. It makes just enough frosting to cover about six of those little Pop-Tarts, but you can very easily double or even triple it to make more if needed.
When I make this frosting, simple pastry frosting, like to change up the type of extract I use to flavor the frosting based on the type of pastry I’m making. My favorites are vanilla (of course), almond, and lemon. The lemon glaze is particularly good on the blueberry homemade Pop-Tarts or on a blueberry scone!
The frosting itself is thicker than a glaze, but not as thick as buttercream. It doesn’t contain any shortening or butter, so it’s nice and light. It really is the perfect topping for breakfast pastries!
Simple Pastry Frosting
The perfect sweet frosting or glaze for all sorts of breakfast pastries. It has a hint of vanilla and is a delicious topping for homemade Pop-Tarts.
Ingredients
- 1/2 cup powdered sugar
- 1/2 tablespoon milk, more if needed
- 1/2 teaspoon vanilla, almond, or lemon extract
- Pinch or two of sea salt
Instructions
- In a small bowl whisk together the powdered sugar, milk, vanilla extract, and sea salt until smooth and spreadable. You'll want this frosting to be thick enough that it won't run. Add milk as needed to acheive the correct consistency.
- Spread over your favorite pastries with a knife or frosting spatula.
Notes
Makes enough to frost 6 homemade Pop-Tarts.
Recipe may be doubled or trippled to make a bigger batch if needed.

This frosting was perfect on top of my berry scones. It was the perfect consistency and super tasty, thanks!
Yes, absolutely Michelle! It’s perfect for topping scones. Now I feel like making scones too! Happy baking!
This truly is the perfect frosting for just about anything. It’s even good drizzled lightly on some fresh fruit in lieu of a fruit salad dressing.
Oh my gosh Jennifer, yes! That’s a brilliant idea! It’s really so, so good. Thank you!
This frosting is so delicious! It’s perfect for any cake, cupcake or even pancakes!
Thank you so much Natalie, I’m so glad you enjoyed it!
I was intrigued by the addition of salt in this recipe, but let me say it is glorious! Sweet and (ever-so) salty is my favorite combo for sweets and desserts!
Mine too, Laura! The salt just adds a little balance to the sweetness and makes it so, so yummy!
